40 mins cooking time + 25 mins preparation
8 tbsp of oil Carbonell Grapeseed Oil
2 tomatoes, sliced
3 potatoes, boiled and sliced
1 red capsicum, sliced
2 onions, sliced
3 boiled eggs, sliced
1 cup green olives
chopped parsley or chives, to taste
salt to taste
Drizzle a shallow oven-proof dish with Carbonell Grapeseed Oil and layer the ingredients as follows: tomatoes, flaked cod, potato, capsicum,, onion, flaked cod, potato slices alternating with tomato. Finish with a layer of boiled egg slices interspersed with olives.
Sprinkle the surface with the parsley and season with salt to taste. Drizzle with Carbonell Grapeseed Oil.
Bake for about 20-30 minutes or until heated through and browning slightly.
