Salmon with Braised Leek and Raisins

Ingredients
4 medium-sized salmon steaks (about 800g in total)
salt and pepper to taste
3 tbsp Carbonell Cereal & Fruit Oil
3 cups) of leeks, sliced
5 tbsp raisins
Preparation
Season the salmon steaks with salt and pepper to taste. Marinate for about 15 minutes.
Heat the Carbonell Cereal & Fruit Oil slowly in a non-stick skillet and fry the salmon steaks, sealing the surfaces well, so that they are golden on all sides. Put the steaks in a baking dish and set aside.
Add the leeks to the skillet and sauté lightly.. Add the raisins, and season with salt to taste.
Pour the sautéed leek onto the salmon steaks.
Place the salmon in the oven, preheated to 180°C and bake for about 20 minutes, or until the leeks begin to brown.
Tip
The technique of sealing the fish before placing in the oven is used to retain moisture and flavor.
Variation
Add dry white wine when sautéeing the leeks.
