Cod à Brás

800g of cod
4 tbsp of Carbonell Grapeseed Oil
1 clove garlic
3 large onions, thinly sliced
6 eggs, lightly beaten and seasoned with salt and pepper
2 cups of straw potatoes
1 tbsp chopped parsley
Heat Carbonell Grapeseed Oil gently, add garlic and onion, and sauté until lightly browned..
Add the shredded cod and cook, stirring occasionally, for about 20 minutes in a covered pot.
Add the beaten eggs and continue cooking, stirring with a fork until the eggs become creamy but not dry. Add the potatoes and mix. Check the seasoning and add salt if necessary.
Strain the mixture to a platter, sprinkle with parsley and serve immediately.
The potatoes should be added just before serving so they do not soften.
