Chicken, potatoes and broccoli one-pan meal

4 tbsp Carbonell Cereal & Fruit Oil
1 clove garlic, sliced
400g chicken breast, chopped
600g potatoes (peeled and cooked)
1 tbsp mixed herbs
500g broccoli, cut into small florets
250g cherry tomatoes, halved
Heat 2 tbsp Carbonell Cereal & Fruit Oil in a frying pan or wok and fry the garlic for 1 minute. Add the chicken, sprinkle with salt and pepper, and fry for about 5 minutes. Remove the chicken and garlic with a slotted spoon and set aside.
Heat the remaining oil in the pan and fry the potatoes with mixed herbs on high heat for about 4 minutes until golden-brown. Add the broccoli and stir fry for 1 minute. Put a lid on the pan and continue cooking over low heat for 5 minutes. Stir occasionally. Add the cherry tomatoes and stir-fry over high heat for 1 minute. Return the chicken and garlic to the pan, heat through and season with salt and pepper.
The broccoli in this dish has a firm bite. If you prefer soft broccoli, pre-cook the florets in boiling water for 3 minutes.
