Asian Tuna with Sweet and Sour Sauce

Ingredients

500g tuna, sliced
¼ cup Carbonell Cereal & Fruit Oil
Salt and pepper, to taste
6 small cloves garlic
20g fresh ginger
2 long green chillies
1 shallot
½ tsp turmeric ground
40g almonds
5 curry leaves
200g cherry tomatoes
For the sauce:
1 tbsp brown sugar
2 tbsp cider vinegar
2 tbsp hoisin sauce
1 tbsp corn flour
1 ½ cups water
½ cup chopped coriander

Preparation

Place the slices of tuna into a bowl and cover with the Carbonell Cereal & Fruit Oil.Season with salt and pepper.
In a food processor, combine the garlic with the ginger, chillies, shallots, turmeric and almonds and blend until combined.
Combine the ingredients for the sauce, leaving the curry leaves and the cherry tomatoes aside.
Heat a fry pan (large enough to fit all the tuna steaks) on medium to high heat and sear off the tuna on each side for 20 seconds. Remove the tuna and set aside.
Add in the remaining oil from the tuna and fry off the paste, curry leaves and cherry tomatoes for 2 minutes. Pour in the sauce and bring to a simmer. Place the tuna slices back into the sauce and simmer for 3-4 minutes until the tuna is just cooked through. Serve with fresh coriander.
